What is the bilona method of making ghee?

First Bud makes A2 Gir ghee with the bilona method: milk is set as curd, hand-churned with a wooden bilona into butter, then slowly simmered into ghee. Commercial ghee usually starts from cream and skips curd and churning. How do I use A2 bilona ghee every day?


Use 1–2 teaspoons of First Bud A2 bilona ghee daily as a finishing fat or cooking fat: on dal, sabzi and rice; for tempering and sautéing (smoke point about 250°C); in haldi milk; on roti or paratha; and in khichdi. It is a condiment-style fat, not a bulk frying oil.
