Mogra Grade — What It Means

Within Kashmiri saffron, Mogra is the highest quality grade. It consists entirely of the deep red stigma portion of the saffron flower with no yellow style attached. This red portion is where all the crocin, safranal (the aroma compound) and picrocrocin (the taste compound) are concentrated. Mogra grade saffron is deeper red, more aromatic and significantly more potent than lower grades where yellow style is included to add weight.


How to Use Kashmiri Saffron Correctly

  • Always bloom saffron first: Soak 8 to 10 threads in 2 tablespoons of warm milk or warm water for 20 to 30 minutes before adding to your dish. This releases the colour and aroma far more effectively than adding dry threads.

  • In biryani and pulao: Add the bloomed saffron liquid over the rice in the last 10 minutes of dum cooking.

  • In kheer and desserts: Add bloomed saffron to milk-based desserts 5 minutes before serving.

  • In saffron milk: 8 to 10 threads in a glass of warm milk with a drizzle of honey before bed is one of the most effective traditional wellness and sleep remedies.
